I am really allergic to pine nuts :( I add a ton of parmesean cheese, or whatever blend thereof (romano, etc.)

I play with the flavor as I'm making it since I find that the flavor of parsley really tends to vary. I like parsley, olive oil, a clove or two of garlic, salt, cheese, and lemon juice.

If you have cilantro as well, you can make it into a chimichurri sauce with pretty much the same ingredients. Just take out the cheese and add some red chili flakes. It has a different flavor than the pesto.
