It was a wonderful experience, but it gets you no closer to a career. The 1 year unpaid internship in CA makes it so I had to return to retail at nights to pay for finishing my education.

Do not, I repeat, Do not go into substitute teaching thinking it'll be a good stepping stone.

However, I did get a lot of really practical experience from my subbing, but I'm now 28 and am just finishing my credential. Took the long way.

Also, Why have you ruled out middle school? It's actually a lot of fun most days.

Best investment ever. Stick with the 4 Qt. size. The tilt-head is a far more useful tool than the bigger one unless you're going into baking as a business.
