Okay so first thing! Take two egg yolks (make sure to get out almost all the whites), mix them with (use a wooden spoon!) 3 tbls. of lemon juice quickly on low heat. Add half a stick of butter and melt it in slowly to get the eggs cooking. Once it's melted in and mixed, add the other half and mix for a while until it melts and the hollandaise thickens. Then put it over a poached egg on fried Canadian bacon on an English muffin. Sprinkle on a little paprika, and voila! You are done with a tasty breakfast.
